I have been going nuts lately craving every carb laden grain filled dessert possible. Today was no different. While I was feeling pretty under the weather physically my mind made me get up and do my favorite thing, create!
I took inspiration for this from Oopsie Rolls and couldn't be happier with the results. I used sf chocolate chips but cheese, almonds, cranberries or any Danish filling can be used!

Makes 6 large Danishes
Ingredients
3 eggs, separated
1/4 teaspoon cream of tartar
3 tablespoons sweetener of choice
2 tablespoons melted butter
2 ounces cream cheese, softened (sub for one extra egg yolk if you avoid dairy)
1/4 teaspoon xantham gum (optional)
1 teaspoon vanilla
1/2 cup sf chocolate chips or filling of choice
Egg wash (mix separately for use towards end of baking)
1 egg, whisked
2 teaspoons water
2 tablespoons sweetener
1/4 teaspoon vanilla
Directions
Preheat oven to 300
In a bowl whisk egg whites and cream of tartar until stiff peaks
In a separate bowl mix remaining ingredients, except chocolate chips, until smooth
Combine both mixtures and spoon onto a lines baking sheet.
Sprinkle chocolate chips in them (I did a spooning mixture, a sprinkle of chocolate, and another small dollop of mixture)
Bake for 30 minutes
Pour egg wash mixture over each Danish and return to oven for a low broil for roughly 2-3 minutes until the egg wash is set and the tops are a nutty brown.
Remove from oven and enjoy!
Note - if filling with almonds, make a simple syrup or use honey to drizzle over the top when finished baking. The same can be done with melted chocolate.
