I was crazy mad hungry today at lunch since my breakfast was kind of a comedy of errors/complete flop. So when I say crazy and mad I mean both, I was starting to lose it and get mad and crazy since I was so hungry or h-angry! I decided that I had to whip something up that would be fast, filling, delicious and fail safe; so I turned to my not so secret stash of shirataki noodles and added a few items from the fridge to make a yummy pasta carbonara! I replaced the peas with broccoli since one cup of peas has more carbs than this entire finished dish, and since I had ham in my fridge and no bacon that was another simple replacement. I hope you enjoy it!
Ingredients
2 tablespoons butter (Grassfed)
3 oz - a little less than half a cup, chopped ham or 3 chopped slices of bacon
15-20 Shrimp (I used frozen fully cooked shrimp without the tails)
1 1/2 cups broccoli crowns, washed
3 cloves garlic, minced
1/2 Cup Evaporated Milk (I had a can of nonfat in my pantry - heavy cream or coconut milk will both do well here as well - I was working with what I had on hand)
1 tablespoon Parmesan cheese
1/4 teaspoon sea salt
Directions
Rinse and drain shirataki
In a med high heat pan dry out noodles while you prepare the other ingredients
Pour shirataki into a colander and allow to drain more while you prep the sauce
Over med high heat melt and brown half your butter
Add in ham or bacon and cook until just about crispy
Add garlic and stir a few times
Add in broccoli and the remaining butter
Add milk and cheese
Add in shirataki and mix well
When the sauce starts to reduce and create big bubbles add in shrimp and sea salt cook lightly until everything is well combined
Serve up and enjoy!
