My family loves ethnic foods so today when deciding how to cook my chicken I decided to go Thai and make Satay. Everyone loved it!
Ingredients
Satay Marinade
1/2 Cup Coconut Milk
2 Teaspoons Curry Powder
2 Teaspoons stevia
1/2 Teaspoon Sea Salt
1/2 Teaspoon Pepper
1/2 Teaspoon Garlic Powder or 1 Clove Minced Garlic
Satay Dipping Sauce
1 Cup Coconut Milk, canned
1 Tablespoon Curry Powder
1 1/2 Tablespoons Nut Butter
4 Tablespoons Stevia
1/2 Teaspoon Chicken Boullion
Directions
Mix marinade ingredients and marinate chicken or beef strips. For chicken, minimum of 2 hours, for beef 4 hours or overnight.
To cook, meat can be grilled or pan seared in coconut oil over medium heat
For the sauce, mix all ingredients in a sauce pan and simmer until it starts to reduce.
I served with a spinach salad dressed with a sweet nut butter vinaigrette. Enjoy!
